Harmonic, persistent, lively taste, producing an enjoyable acidulous sensation due to its carbon dioxide content and pleasant sensations of sour-cherry and cherry. Its long finish carries along slightly bitterish notes. Excellent as aperitif, in fact, it is known as “The Prince of Happy Hour”.

Vinification
Vinification: The grapes remain in contact with the skins at low temperature (5° C) for a short time enabling the solution of the must aromas. Fermentation: A second fermentation of the wine occures with selected yeasts at a controlled temperature in pressure tanks. The foaming lasts 10/15 days.
Colour
Colour: Brilliant pink colour with a fine and persistent perlage.
Bouquet
Bouquet: Rose, cherry and red fruit hints, lightly spicy.
Taste
Taste: Well balanced and lingering with a pleasant acidity and a smooth finish.
Food pairing
Food pairing: Excellent with shell fish, raw fish and fish soups. It goes well with pizza, cold cuts and as an aperitif.
