Fenaroli - Metodo Classico

Straw yellow with golden reflections, with a fine and persistent perlage. Excellent with shellfish crudités, carpaccio, risottos, and elaborate fish dishes.

Vinification
Vinification: grapes are softly crushed and vinified in stainless-steel tanks at about 15°C. At the end of fermentation, maturation is carried out on lees. Foaming and maturing on the lees: in the spring following the harvest, the base wine undergoes a second fermentation in the bottle at a temperature of 12°C. Once the second fermentation on the lees ends, the bottles mature in the cellar and placed on one side for at least 18 months. The wine is clarified by the ‘mise en pointe’ process after a complex ‘remuage’ or ‘riddling’, then disgorgement and dosage take place.
Colour
Colour: Straw yellow with golden reflections, with a fine and persistent perlage.
Bouquet
Bouquet: Hints of chamomile, sage, white peach and lemon zest with notes of flowers and dried fruit. Aromas of butter and bread yeast.
Taste
Taste: intense and fragrant, savory, good persistence with a slightly bitter finish.
Food pairing
Food pairing: excellent with shellfish crudités and carpaccio. It goes well with risottos and elaborate fish dishes, tartare and sliced tuna and mature cheeses. Traditionally recommended pairing: “Pizz e fuje” (tasty mixed country vegetables with corn flour pizza).
