Fenaroli - Metodo Classico

Intense and brilliant golden yellow. Fine and persistent perlage. Perfect with mixed fried fish, and also for rich appetizers based on cold cuts.

Vinification
Vinification: grapes are softly crushed and vinified in stainless-steel tanks at about 15°C. At the end of fermentation, maturation is carried out on lees. Foaming and maturing on the lees: in the spring following the harvest, the base wine undergoes a second fermentation in the bottle at a temperature of 12°C. Once the second fermentation on the lees ends, the bottles mature in the cellar and placed on one side for at least 18 months. The wine is clarified by the ‘mise en pointe’ process after a complex ‘remuage’ or ‘riddling’, then disgorgement and dosage take place.

Colour: intense and brilliant golden yellow with a fine and persistent perlage
Bouquet
Bouquet: notes of white pulp fruit, ripe fig, dried and candied fruit. Aromas of pastry and bakery.
Taste
Taste: On the palate, it is particularly dry, savory, and fragrant, well-balanced and complex. It is a harmonious wine with a long and persistent finish.
Food pairing
Food pairing: Perfect with mixed fried fish, and also for rich aperitifs based on savory cured meats, caviar tartines, or tempura vegetables. Traditionally recommended pairing: 'fried pizza'.
